Ingredients:
● 180g mixed lettuce leaves
● 80g blackberries
● 1 mediterranean cucumber
● 60g shelled edamame beans
● 100g feta cheese
● Basil and white balsamic salad dressing (Woolworths)
Method:
1. Slice the entire cucumber into rounds
2. Halve the blackberries
3. Toss all the ingredients into a salad bowl and crumble the feta on top.
4. Generously dress the salad with the salad dressing
5. Voila - you’re done! Enjoy as a side salad.
Substitutions:
● Blackberries for blueberries or dried cranberries
● Edamame beans for green peas
● Feta cheese for goats cheese or shaved parmesan
