Adding flavourful toppings or dips to meals can enhance the satisfaction factor of a dish - allowing for more enjoyment and a feeling of content once finished eating. Add this jam to your meals or snacks for that satisfying zing!
Ingredients
(10ish servings)
● 2 cups blueberries - fresh or frozen
● 3 tablespoons water
● 1 tablespoon lemon juice
● 1 tablespoon honey / sugar / maple syrup
● 1/2 teaspoon vanilla essence (optional)
● 2 tablespoons chia seeds
Method
Add the blueberries and water to a pot, and cook on low heat for 5-10 minutes. Stir regularly, and mash them up with a fork as they soften.
2. Add the lemon juice, rind, honey, vanilla essence and chia seeds. Cook for a further 5 minutes. Add more water as needed if the jam reduces too quickly.
3. Test that the jam has thickened properly by coating the back of a spoon with the jam, and running your finger along the length of the spoon. If the mixture remains separated and does not seep out on the sides, the jam is ready. Remove from the heat, transfer to a jar and allow to cool with the lid off.
4. Once cooled, place in the fridge and consume within 7 days. Enjoy!
