This has become my go-to dinner when I'm short on time, energy, or inspiration. With mostly shelf-stable ingredients, it's the perfect backup meal to keep on hand. Despite its simplicity, it's balanced, delicious, and never disappoints.
Ingredients (for 3-4 servings)
400g wholewheat pasta
200g diced bacon (option to switch out for any canned beans or beef mince or sliced chicken breast)
1 cup frozen green peas
400g jarred tomato sauce (I use the Monteverede Olive Tomato pasta sauce from Checkers)
200g feta
Instructions:
Cook the pasta according to packet instructions. At the last minute add the frozen peas. Drain the pasta and peas.
To a pan on medium heat, add the diced bacon and cook until a bit crispy - about 3-5 minutes. Stir frequently.
Remove the pan off the heat, and add the jar of pasta sauce, and drained pasta and peas.
Return to the heat, and stir to heat through.
Crumble the feta into the dish, and stir lightly to combine.
Serve with freshly ground pepper. Enjoy!
